◾What Goes in Chicken Burritos?

• Mexican Chicken: Mexican is made in the crockpot, so it literally takes a dump run -- or nap -- until it's juicy, tender, and full of flavor. If you're really craving chicken burritos right now, you can toss some cooked, shredded chicken in some salsa. I haven't personally tried this - I'm just wondering the fastest way to get these chicken burritos in your mouth.

• Cheese: I prefer to use Cheddar cheese as it does not lose its tangy flavor and matches beautifully with the cheesy Green Chili Sour Cream Sauce. You are welcome to substitute whatever you have on hand, from Mexican Cheese Blend, Monterey to Pepper Jack.

• Add-Ins: Mexican chicken and cheese are a must for chicken burritos, but you can add black beans, refried beans, rice and even vegetables like bell peppers, corn and zucchini.

• Burrito Size Tortillas: You'll need to wrap all your cheesy goodness in one large burrito size tortilla. I prefer the raw/uncooked tortillas found in the refrigerated section like Tortilla Land (I buy mine at Costco). They are thin so they bake and crisp up beautifully! If you use unbaked tortillas, you can still make the recipe exactly as written. Traditional baked tortillas are delicious too!


◾How do you make chicken burritos in the oven?

• Make the Chicken: Prepare Mexican Chicken according to recipe directions. Drain off any excess liquid from the chicken. This will ensure that your burritos don't get soggy.

• Prep Pan: Preheat oven to 400 degrees F. Line a baking sheet with foil and put a baking rack on top. A baking rack helps the chicken burritos crisp up on all sides, but if you don't have a baking rack, simply skip this step and lightly grease your pan with nonstick cooking spray.

• Assemble burritos: Prepare burritos by heaping ½ cup filling into each tortilla (raw if using raw tortillas), top with desired amount of cheese and roll up burrito style, tucking ends of burrito tightly.

• Olive oil: Place burritos seam side down on a baking rack. Lightly brush both sides with olive oil or spray with nonstick cooking spray. I like to brush my burritos with olive oil - I find they get more crunchy that way. Just make sure you brush them lightly.

• Bake: Bake 18-20 minutes or until golden. Fry till desired crispiness, flip and fry till golden brown on the other side.
